Frittata Time

Image
I know it's hard to believe, but up until an hour ago yours truly had never made a frittata. I kid you not. Oh I had attempted omelets before, but to be honest, those usually end up more like scrambles. But last week I was reading my favorite blog and my friend was sharing a really yummy looking recipe. Like really yummy. So yummy looking I decided right than and there it was gonna have to be on my menu plan for this week. And today was the day. So with my friends recipe printed out and all the ingredients gathered I set out to make my first frittata.  Low and behold, I did it!!! I'm not gonna lie, I think next time I am gonna cut back on the amount of peas I put in. And well, I am not gonna lie I missed meat and crunch. Between the egg and peas, it was too soft. I needed something crunchy, and something a little salty (I discovered I didn't have any Parmesan cheese AFTER I was home from work), which means next time, it will have bacon in it. I'm sure...

Who Knew...

Who knew that so much would happen in my life in 6 months. I mean seriously. January I went on my first solo vacation. Me, Miss Social. traveling alone, staying alone when I got there. But God so blessed that time, I got to know an amazing family while I was down in Hawaii. They welcomed me into their home on multiple occasions and I got to go to church with them. And Dave even took the boys for a night so Monica could take me out for my birthday. And it's not everyday you completely stop your diet and still LOSE weight on vacation. It wasn't a lot, but it wasn't a gain. I think it's cause I DIDN'T lay on the beach the whole vacation. I did a lot of walking, and hiking, I hiked a lot. And it was just so nice and there was a path near the place I rented. I went out for a lot of walks before getting the day started. Pearl Harbor involved a LOT of walking. All through Pearl, the Battleship Missouri (had a lot of stairs), Submarine Bowfin (even more stairs).  ...

Team CCF Bootcamp

Guess what I did today? What you can't. I decided to finally make it to one of my friends impromptu bootcamps. Charles is pretty awesome, I have been working out with him regularly for the last several months, but that has been at fit club, where we watch workout videos and try to keep up. And generally we are capable of it. But see Charles is a workout beast, like literally he does a video series called "body beast".  And he is a certified trainer. So the idea of actually doing a workout created by him was how shall I say this...SCARY. But today I did it. Like I did it..NO EXCUSES. Mind you, until today the only one of those 4 exercises I had actually done before was the kettlebell swings. The tire flips and tire jumps were definitely not something I had ever attempted before, pretty much hadn't even really wanted to do them before either. Trista and I took turns conquering the 200 pound 16 inches while laying on it's side tire we have now named "Pip...

Re-Focused

I'm Back!!! Totally refocused and re-energized and re-motivated...and I am sure many other re's. For the last month I have been a part of a challenge group and one of the assignments was creating a Priority Clarity Statement. Having to put it all in writing was very helpful as I hadn't done it in a while. So there it is. My goal for May is to re-lose those 10 pounds that I have let creep back on.

Left you hanging

Bet you all thought I gave up. Gave up on blogging, or gave up on weight-loss. Doesn't matter, cause the answer is NO, I have not given up. In fact I am probably more motivated and set than I have been in a while.  And there are several reasons behind here, here are just a few highlights. 1. I had to go to my favorite doctor back in December cause I was having this constant feeling that my heart was racing. It has since calmed down and not been a problem. But while I was there as he was clicking through my profile on their EMR he turned the computer screen and showed me my weight graph since I started seeing him just before I started this whole journey. It was totally awesome to see 58 pounds of weight loss on a graph! 2. Mac Fit Club! Twice a week my friend hosts a free community workout using some of the systems designed by BeachBody. So the P90X, Insanity, Combat. You know, those things we all see the infomercials for but can't bring ourselves to order cause either they ...

On the 12th day of Christmas...

So today I made it back to my beloved spinning class. I had passed on spinning for the 6 weeks of bootcamp, and now that it is over back to spinning I went. And boy did I choose a good one to make it back too. It starts off with a quick warm up, then 15 straight minutes on the bike, with no rest periods. Then we played a "game". At least that's what Olivia called it. Musical bikes (we just had to grab the bike not have to get back on), each time someone lost they had to go run the stairs till the rest were done. How little I knew the stair running would be the most restful part of the whole evening. Cause then we really got down to business. On the 12th day of Christmas my Trainer gave to me...30 Minutes of torture! 12 Jump Squats 11 alternating side crunch/knee raise 10 mountain climbers 9 standing jackknives 8 push-ups 7 reverse lunges 6 squats 5 lateral side raises (with weights) 4 plank jacks 3 burpees 2 jumping jacks 1 minute of Plank We started with...

Earn Your Shower

Today I thought I would share with you an actual workout from boot-camp. Haven't shared any of those with you all yet. I was dreading today for 2 reasons. One, I hadn't been to the gym in a week, and two it was treadmill day. I do not like treadmill day. Mostly because I do not like running, I suck at it. Like I can run for about 30 seconds and then I am back to walking. Good thing that was the interval today. 2 minute warm up, 16 minutes of 1 minute 30 seconds "slow" pace (she had written down 6.5 mph) followed by 30 seconds at a "fast" (increasing each time) pace intervals, after 16 minutes repeat the pattern starting at minute 2. I stayed on for all 32 minutes, and I even followed the interval pattern. Just not the speeds that were written down. See her fastest speed listed was 10 mph, yeah I didn't even pretend to go anywhere near it. I just started off a lot slower than the "rest" pace (6.5 mph) and made sure to increase my speed each ti...
